Why Heirloom Flour?

Before wheat was bred for industrial production, it was grown for flavor. We use heirloom flour because it preserves traditional grain varieties, supports the farmers who grow them, and creates tortillas with exceptional taste. It's one more way we're bringing old-world ingredients back to the table. Heirloom flour is more nutrition dense, and easier on the digestive system since it doesn’t contain all the glyphosates and preservative.
